Cookie Time

Making a batch of cookies has always been a big deal to me.  Something that takes time.  Andrea makes cookies like its nothing!  By the time I run to the store and buy a package of Oreos, she’ll have the first warm batch coming out of the oven.  She has always been that way.  Even before the kids came along, Ben had homemade chocolate chips in his lunch.  I’m pretty sure he didn’t have “extra crispy” bottoms like Wally did!  When Andrea visits my house,  she dusts off the mixer and oils its little engine and stirs up cookies.  So should I have been surprised that she made cookies while I was visiting?  Well I was.  When you get two babies asleep at the same time, making cookies is not my first thought.   But then, she did have two efficient helpers!

There we go, Mom is helping to pour and sister’s expert eyes are making  sure it is right!  Big sisters are very good at this, it’s part of their job description!

Thankful Thursday

On a shelf in my home I have this cute wooden apple that my friend and neighbor gave to me years ago.  Along the side it says, “friends to the core”.  I met Kathy years ago when we bought our first home.  Another neighbor mentioned to me that a woman down the street was home schooling and since we were also, I went to knock on Kathy’s door.  I am so blessed that we met that day.  Kathy is a wonderful friend and although our families are now grown and we live thousands of miles apart, I still count her as one of my closest friends.

One thing I remember about Kathy, she is is always cooking up something good and she likes to check out new recipes.  She was the one who told me the recipe for the best oatmeal raisin cookies is in the Colorado Cache cookbook…and they are the best.  She shared with me a microwave peanut brittle recipe I have used at Christmas many times.  She showed me how to make eggrolls and shared that great recipe.  And she also gave me a recipe for zucchini bread.  And quirky as it may sound, I am very thankful for that recipe!  I have never really liked baking or been very good at it, but this recipe I have done pretty well with.  It makes two nice loaves and is just really tasty!  I have been sharing it in the Polo Club quite a bit.  I have taken a loaf of bread with a nice card to several residents when there has been a death or illness.  I even got really brave and made several loaves for our Homeowner’s Association meeting this past Tuesday.  Not only did the residents seem “wowed” because I made it, I received several nice compliments.  So I have found myself saying over and over, Thank You Lord. 

Here’s the recipe:

3 eggs, 1 cup oil, 2 cups sugar, 3 cups peeled, grated zucchini, 2 teaspoons vanilla, 3 cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 scat teaspoon salt, 2 teaspoons pumpkin pie spice, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 cup chopped nuts.

Beat eggs until light and foamy.  Add oil, sugar, zucchini, and vanilla.  Mix well.  Add flour, soda, baking powder, and salt.  Mix well.  Add nuts.  Bake in two greased, floured loaf pans and bake at 325* for one hour.  Cool on rack.

I grow zucchini in the garden each summer just for this recipe.  I grate it (I do not peel it as recipe says) and freeze it so I have it all year long.  The bread freezes well too.  I made mine for the Homeowner’s meeting before I went to New York because I knew I would not have time when I returned.  I’m planning on freezing some just to have on hand for those uncertain times when I would like to give it out.  I have used the mini pans too and taken it to residents who live alone. 

All that to say, this little recipe has been used to bless others!  And each time I make it, I am blessed to think of my friend Kathy!  See you in July Kath!

Pinterest

Have you entered the wonderful world of Pinterest?  I get a little lost but there are some great ideas out there.  I have been pinning many cute card ideas.  It seems that the ideas I think are so cute come from the same pinner.  Someday I will need to meet her.  I finally took some of the ideas on my boards and put them into action and thought I’d share the results.

I loved this card when I saw it. It is from a blog called Sylvia’s Stamp Corner.   I could see it as a sympathy card.  And that is what I used it as.  Here was my card…

I also tried a couple of recipes from Pinterest…

Claire Bidwell Smith had a recipe for Windy City Crescent Rolls.  You make a spinach and cheese mix and roll it up inside crescent rolls.  For me, this sounded better than it tasted.  They weren’t bad but I was expecting them to melt in my mouth. 

I loved these Easy Zucchini Parmesan from Spark Recipes.  They did melt in my mouth and they were so-o easy.  I made these every night while Wally was gone on his trip to Yellowstone.  One time I threw in some mushrooms and grape tomatoes.  Yum-Yum!  I think the recipe says it is only 50 calories per recipe.

I’ll Make These Again!

That’s what I said the first time I made these enchiladas.  That was just a week ago and sure enough, I made them for dinner again last night.  In fact I was going to skip them since Wally was not going to be home and Wes seemed a little disappointed.  So I went ahead.. they are really easy. 

Have you seen these new Creamy Skillets next to the cream cheese at your grocery store?  They are made by Philadelphia Cream Cheese.  They come in different flavors and are designed to make dinner easy…toss in your own meat or pasta and add the creamy carton and wha-la---dinner is served!  We tried one of the savory garlic flavors that you use over pasta and chicken when Andrea was here visiting.  It was ok.  But the Santa Fe blend with the chicken enchilada recipe is a definite repeat!  Here’s the recipe:

  • 1 small onion chopped
  • 3 Cups shredded chicken (I used 2 chicken breasts)
  • 1 can 14.5 oz. can tomatoes, drained (I used a can of 10 oz. Rotel tomatoes, not drained)
  • 1 tub Philadelphia Santa Fe Blend Cooking Crème
  • 1/2 Cup Mexican style shredded cheese
  • 8- 6” flour tortillas (Both times I made this I got ten out of the recipe)

Cook chicken and shred.  Sauté onions in a little oil or cooking spray.  Stir in chicken, tomatoes, 3/4 Cup of cooking crème and the shredded cheese.  Spoon about 1/3 cup of mixture onto center of tortilla.  Roll and place seam side down in 9x13 dish treated with cooking spray. Top with remaining cooking crème. Cover and bake in 350* oven for 15-20 minutes, or until heated through.

Let me tell you, if you have any leftover, they won’t be for long.  Wesley got a little possessive over the four we had left last time I made them and staked his claim on them.  They are that good!

Its What’s for Dinner, Tonight

A couple of weeks ago the homeschoolers at our church had a Valentine’s Day Party.  I got invited to come and help with their Valentine card making activity.  It was  a lot of fun.  For lunch they prepared these Barbecups.  One of the Moms brought ground beef like the recipe calls for.  One Mom brought the BBQ Pork you buy already prepared in the little tubs.  One Mom made BBQ chicken.  All were very good!  I know, because I sampled them all!   I thought these were quick to make and would be good for dinner on one of those nights you need something fast or when you don’t really want to be in the kitchen at all!

Barbecups

Ingredients:
1 lb. lean ground beef                                                                                                1/2 cup barbecue sauce
1/4 cup chopped onion
1 to 2 tablespoons packed brown sugar
1 can (12 oz.) Pillsbury® Grand's!® Jr. Golden Layers® Refrigerated Buttermilk or Flaky    Biscuits
1/2 cup shredded Cheddar or American cheese (2 oz.)

Directions:
Heat oven to 400°F. Spray 10 regular-size muffin cups with cooking spray, or grease with shortening. In skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally; drain. Stir in barbecue sauce, onion and brown sugar. Cook 1 minute to blend flavors, stirring constantly.
Separate dough into 10 biscuits. Place 1 biscuit in each muffin cup. Firmly press in bottom and up sides, forming 1/4-inch rim over edge of cup. Spoon about 1/4 cup beef mixture into each biscuit-lined cup. Sprinkle each with cheese.
Bake 10 to 12 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from muffin cups.

Eat up, it’s what’s for dinner!

Yes, I Can!!

I have never been crazy about baking or making bread or any of that yummy goodie stuff in the kitchen.  But for some reason, I do like to can!  Part of me likes that cozy feeling of getting ready for the coming winter. And part of me just likes to look at jars, filled and colorful bits of fruit or veggies!  This past week I canned 21 quarts of salsa!

Earlier, in late August, I did my peaches, pears and peach jam.

I tried something new this year since I seemed to have a bumper crop of jalapeno peppers.  I discovered a recipe for hot pepper relish.  It’s pretty tasty! 

             

 

Here’s a little twist on “canning”.  Philippians 4:13 says, “I can do all things through Christ which strengtheneth me.”  This is the best kind of canning and it is not seasonal!   We sing a song with the kids in Sunday School that just says it all…

I can put my faith in Jesus…Yes I Can!

Thank Him for His loving kindness…Yes I can!

I can have my sins forgiven,

Have a promised home in Heaven,

Win the battle when I’m tempted…Yes I can! 

 I can serve the Lord my Savior…Yes I can! 

Each day grow to be more like Him…Yes I can!

I can read God’s Word and pray,

Find His will and then obey,

Share God’s message of love today…Yes I can!
